Confit

Confit translates from the French word confire which means ‘preserved’ Most commonly used in conjunction with Duck or other poultry, the Duck would be cooked in Duck fat ‘Confit Duck’ as a way of adding tremendous flavour and preserving the meat. Confit can relate to anything slowly cooked as a means of preservation, vegetables, fruits, seafood although not traditional can benefit from this classic cooking method.
