Carlos was born in Chile, and then quickly arrived in Adelaide at the tender age of 6. Growing up in a Chilean household he was constantly exposed to fresh food with a South American touch.

He has been cooking in Adelaide for 15 years, working his way through some very reputable restaurants. Most recently he worked at Bird In Hand Winery, 2KW, Magill Estate, and was the Head Chef at Georges on Waymouth.

Carlos’s style of cooking has had many influences along the way, having worked with some amazing Italian, Middle Eastern and South American Chefs.

His food is strongly reliant on seasonal produce and high quality products. He works closely with his suppliers in order to build strong relationships and guarantee that you’ll get the best catch, pick or arrival available.
