James Garvan trained and worked in some of London’s seminal Modern British restaurants and gastro pubs, including Le Caprice, The Brackenbury, Alastair Little, The Havelock Tavern, The Chiswick, and The Anchor and Hope.

At these restaurants the emphasis was always on quality and seasonally lead produce, which influenced the daily-changing menus. In these restaurants he learned the essential basics of fish work, pasty and butchery. Having the opportunity to break down whole carcasses allowed them to use every part of the animal in interesting and delicious ways. There was no fuss and no waste; it was all economically sensible. The food was sustainably sourced and rustically delicious.

James carries on this ethos, and believes food should be tasty, uncomplicated and enjoyed with family and friends.
