Demelza spent the past 14 years living in London, for most of her career also travelling around the world working in some amazing restaurants. Demelza has been lucky enough to see some spectacular parts of the globe using her culinary skills.

Demelza began her training in Sydney where she studied both Eastern and Western cookery whilst working in some high profile restaurants, like Belmondo. and La Goulue. After beginning with traditional French cuisine and then moving towards Italian, she moved to London in 2000 to expand her knowledge with fusion at The Sugar Club. Two years on, Demelza was eager to learn more, so ventured into the big world of catering her she was fortunate enough to travel with bands around Europe. Then settling down in London Demelza’s love for canapés led her on a creative path with some of London’s highly regarded companies like Urban Caprice, and smaller boutique companies like More Please (formely Yes Please ) and Eico Kano Japanese.

After having children Demelza opened up her own café in North London called Fred and Fran putting her fine dining skills aside for a more relaxed approach to cooking. After a successful 3 years, Sydney was calling and homeward bound Demelza came, where she has settled to raise her young family and to bring her knowledge back to share with Australia.

Demelza’s food is influenced on Middle Eastern, Mediterranean and African flavours with Modern Australian edge.

The food was well presented and freshand delicious. Our Chef Demelza and her assistant were lovely and went about the job while the guests were enjoying themselves. I was particularly impressed with the canapés they were both well presented and a delicious way to start the event.
Better advice from AYT re timing of courses and staff required for larger numbers is my only issue as a lot of cleaning up was required on my behalf after staff had finished shift which spoiled it for me. On the other hand the invited guests enjoyed themselves.
