James Garvan trained and worked in some of London’s seminal Modern British restaurants and Gastro pubs, ( Le Caprice, The Brackenbury, Alastair Little, The Havelock Tavern, The Chiswick, The Anchor and Hope)

‘The emphasis was always on quality and seasonally lead produce which appeared on the daily changing menus. I learnt the essential basics of fish work, pasty and butchery. Breaking down whole carcasses allowed us to use every part of the animal in interesting and delicious ways. No fuss, no waste, economical sensible. The food was sustainably sourced and rustically delicious.’

James carried on this ethos and believes food should be tasty, uncomplicated and enjoyed with family and friends.
