Jason’s passion for food started at a very young age, baking cakes with his mum, long before he knew the difference between plain and self-raising flour. He discovered the difference, after that beautifully designed, flat and heavy apple cake. His young inquisitive mind then set to work. It was at the tender age of 8 that his love for food was born.
From then on he has always questioned the status quo and looked for a better way.

This determination led him to his first head-chef role at the completion of his apprenticeship. His continuing drive saw him gain invaluable experience working with chefs in the top restaurants around Sydney.

Jason then applied this knowledge in several head-chef positions in Sydney’s top restaurants. Jason’s hunger for new experiences and challenges saw him venture into catering, where he has concentrated his efforts over the past few years. Jason’s approach to cooking is to balance clean flavours with layers of texture.

Five years ago Jason discovered another food related passion during his work with a corporate team building company where he discovered a love of teaching. Jason became a qualified trainer and assessor and began running cooking events and classes through a variety of mediums. His future goal is to become a Tafe teacher so his 20 years of cooking knowledge and his enthusiasm can inspire budding apprentices.

Wow! what an amazing experience had by ALL. Chef Jason was exceptional! From the moment he arrived he looked the part, was charismatic and ON TIME! The dishes looked exquisite as they arrived on the table and each mouthful was an experience on it’s own. Chef Jason took us through each meal and was happy to talk to us throughout the night. Our waiter Jefferson was simply wonderful, he was so polite and his service was outstanding. There was never a time our glasses were empty or our plates were not full. We’d love to have them both permanently. If it’s something you do once then don’t hesitate, one the best nights we’ve had in a long time. Jason was late — which worried me considerably — though he did phone — still — Sydney traffic can be planned for. Once he arrived he did the job very well. From Ellie’s description (our first choice was Akuc) Jason was to ‘do a bit of a chat’ around the food — this didn’t eventuate…

Overall he coped well with our lactose and gluten free guest (thanks) but I had hoped for a bit more ‘on the day’
