‘Craquelin’ or ‘Craquelin pate a choux’ are french pastries similar to cream puffs. They contain two different types of batter, pate a choux and a dough similar to sweet paste.

They are light, fluffy and alone not overly sweet. Usually stuffed or piped with fresh fruits, whipped cream and/or chocolate and toffee sauces.
