Dulce de leche translates to Candy of milk, it is made by slowly cooking condensed milk until it reduces and caramalises creating a milk toffee sauce.

In modern cooking Dulce de leche is often used as a term for a toffee sauce, not necessarily a milk based variant as is traditional in Europe and widely across south and central America.
