Akuc Issac Chol

Born in Sudan to an Eritrean mother and South Sudanese father, Akuc is the eldest girl of 11 children. Akuc attended an Arabic school and now speaks five different languages. One of her greatest challenges was arriving in Australia as a teenager and having to attend school without knowing the language and how to read or write.

Her greatest influence is her mother, who fled Eritrea on foot, joined her husband’s tribe in Sudan without knowing the language, then brought her children up on her own with very little support.

Akuc studied commercial cookery at TAFE before beginning her apprenticeship at Spice Temple, where Neil Perry rated her among the best junior talents across all his kitchens. She finished her apprenticeship at Lochiel House in the Blue Mountains.

Akuc is working on her own range of hot chilli sauces and dreams of opening a home-style African restaurant where her mum, aunties and sisters would work and where people would feel happy as soon as they walked in. “I want to stay connected to the cooking traditions from Africa.”

Akuc recently appeared on Channel Ten’s ‘Masterchef The Professionals’. We are pleased to have her as a Personal Chef.

Ben Munro

Born in New Zealand, Ben has travelled most of his life, living and working in Asia, England, United Arab Emirates and Australia.

He completed his Chef training at the International Centre for Culinary Arts, and worked under 3 Star Michelin Chef Marcus Dudley.  Ben has a passion for international cuisines, their ingredients and where produce comes from.

Most recently Ben has worked for exclusive venues in New Zealand including Eagles Nest, Matauwhi Bay Manor and the historic Duke of Marlborough Hotel.  He has catered for celebrity weddings and functions both large and small.

Passionate about growing his own herbs, vegetables and micro greens, Ben loves nothing more than to spend the morning in his garden collecting fresh ingredients for the evening’s dinner, whether he is cooking for his young family or his clients.  Ben’s food philosophy is to take simple ingredients and make them look and taste stunning.  Not often out of the kitchen, when he finds the time Ben also loves fishing and being out on the ocean.

We are pleased to have him as a Personal Chef.

Darrin Tunstall

Darrin Tunstall is Queensland born and bred.  He has over 28 years’ experience in the Chef industry. He completed his formal Chef Qualifications at 29 Murray Street – an exclusive Brisbane Wedding Venue.

Recently Darrin has worked at leading venues throughout Brisbane and interstate, including Queensland Parliament House, Brisbane Entertainment Centre, and Doomben and Eagle Farm Racecourses. He has also been a personal caterer to Celine Dion, Elton John, Andre Rieu and Pink.

Darrin was extensively involved in the Athletes Village at the 2006 Commonwealth Games, and catered for up to 10,000 people a day, so he is more than comfortable working with big numbers.

Currently Darrin operates his own catering services at some of Brisbane’s top GPS schools.

Darrin is passionate about food and about delivering the highest level of service. He loves spending time searching for the freshest and most seasonal ingredients. When he finds a free moment he also loves spending time in the ocean and being out on the open road.

Please note our Chef was Hannah – she is not listed in the list of chefs but she was great, so was the waiter David.

It was fabulous, thank you. I can’t speak highly enough about the experience. Akuc’s food is so warm, and wholesome, and just so beautifully flavoured. Fernando loved it all – the relaxation of being at home, the amazing flavours, the chance to talk to Akuc about her cooking and a little about her life, plus the fact that we only had to wash up the wine glasses at the end of the day!

A great experience, thanks for organising it and again, thanks to Akuc for making Fernando’s 40th an experience to remember.

The night was fantastic! Akuc is just an absolute joy and pleasure and she was genuinely so pleased to be there too. She posed for group pics at the table with us and chatted about the food plus her Master chef Professionals experience. The food just fantastic – couldn’t fault it at all!

Akuc and I live really close to each other so we will make every effort to keep in touch too.

The important thing was that it was my sister’s night and she summed everything up in one word ‘perfect’ and it was. It was a perfect evening.
