Aioli is a a mayonnaise like condiment or sauce from the provencal region. Traditionally made from only roasted garlic and Olive oil, in this day and age however many variations exist.
Most commonly Aioli is made from Olive oil, garlic, egg yolks and lemon juice emulsified to thicken. Different variations may include various oils, acids and vinegars, flavours and sometimes ground potato.
Incredibly versatile, it can be served with almost anything!
