Bresaola is an Italian air dried beef preparation. With a similar texture and appearance to prosciutto the beef is air dried and aged for 3-4 months. The Air drying process leaves a dried intensely flavoured cut of meat. Used in a similar manor to other dried meats, Bresaola would be sliced very thinly and often served as a part of Anti-Pasto or as an entrée or canapé.
