Consommé

A Consommé is a clear, thin soup that has been clarified or strained through muslin (French cheese cloth)

Traditionally a consommé would be made from tougher cuts of ground meat, root vegetables, spices and aromats. The soup is then clarified using a ‘raft’ made from blended vegetables and egg whites. As the egg cooks it rises through the soup catching any sediment or impurities clarifying or clearing the liquid.
