A Croquette is a French term, classically used for a small bread crumbed potato cake.

Fillings vary and can be based on mashed potato, béchamel sauce, soaked bread and flavoured with sautéed onion, garlic, various herbs and spices with endless combinations. Usually deep fried, crispy and piping hot served as a canapé or an accompaniment to a main meal.
