Dijon Mustard, was created in the French town of Dijon, it was an adjustment of a mustard recipe where verjus was used in replacement for vinegar.

Most Dijon mustards these days use white wine, giving it the sweet characteristic that the verjus did back in the day! Absolutely delicious with cold or cooked meats and cheese, very commonly used as a base for salad dressings and vinaigrette’s.
