Financier

A small French cake shaped like a miniature bar of gold, popular in the Paris stock exchange and named Financier after the term for investor.

A Financier is based on almond meal, and flavoured distinctively with beurre noisette (brown butter) giving a rich nutty and moreish sponge cake.
