Madras
Madras is the capital city of the Indian state of Tamil Nadu from which the infamous spicy Madras curry sauce was created.
The Madras curry sauce is a deep rich red achieved by the generous use of dark red chillies, paprika and turmeric. Other spices may include garlic, onion, asafoedita, ghee, coconut, garam masala, coriander and black pepper.
