Remoulade refers to an aioli based condiment with the usual addition of Celeriac. Not to be imagined as a wet product it has more a consistency of coleslaw.

The celeriac or other chosen vegetable is thinly sliced, cured with salt to maintain crunch and then bound with the aioli.

Absolutely delicious, great with fish, poultry and red meats.
