The term salsa verde refers to green sauce. The most common variation is the classic Italian Salsa verde, consisting of parsly, capers, garlic, lemon, anchovie, onion and vinegar.

Sometimes chopped and coarse, sometimes blended and smooth its matches well with fish, red meats, poultry and vegetables
