XO sauce

Xo sauce is a spicy seafood sauce originating from Hong Kong and used heavily in Chinese cooking. Xo sauce has many different recipes but will most commonly include dried scallop, red pepper, dried shrimp, garlic and canola oil.

Xo sauce has a beautiful richness and is used in somewhat similar manor to soy sauce where the natural sodium levels in the dried seafood offer a natural saltiness.
