What is Yabbie?

A freshwater crustacean found in Wales and Australia, yabbies often develop a distinct flavor based on the bodies of water they live in.  A small crustacean, they grow to be around 12 centimeters and weigh in at around 70 grams. They have an earthy flavor and a firm texture that makes them a favorite of chefs who enjoy diversifying their menus.

How can yabbie be prepared?

Yabbies can be prepared in a variety of different ways. These small crustaceans can be grilled, roasted, poached, or baked. Some ways you may see yabbies on a menu might be as an appetizer, atop a salad, or as part of a pasta dish.
