A highly qualified chef, Wayne started his formal catering training in North Wales, UK and achieved his catering diploma in 1989. Whilst studying he worked at the Grosvenor Hotel, Chester (1 Michelin) and went on to continue working in only fine dining restaurants such as The Berkley and Huntstrete House (Michelin).
He completed stage in Lyon, France in Michelin rated restaurants and achieved 3 AA Rosettes/Michelin at 2 restaurants in the Cotswolds and Northwest of England. Wayne also completed his teaching degree at Lancashire Uni UK and became a teacher.
He is very passionate about fine cuisine and enjoys traditional cookery with a cosmopolitan twist. His philosophy on food is; Food should be simply handled with care and attention, detailed presentation that looks simple but flavours should be at the forefront…
